Khaman Dhokla
Ingredients for Khaman Dhokla:

  • Bengal gram flour (besan) - 1 cup
  • Semolina (rawa,suji) - 1 tablespoon
  • ½ tablespoon citric acid crystals (limbu na ful)
  • Sugar (Chini) - 1 tablespoon
  • Green chilli paste (Hari mirch ) - 1 teaspoon
  • Ginger paste (Adrak) - 1 teaspoon
  • Fruit salt (Eno) - 1 teaspoon
  • Oil - 1 tablespoon
  • Mustard seeds (Rai) - 1/2 teaspoon
  • Green chillies (Hari mirch) - 2 no's chopped long
  • Coriander leaves (Dhaniya patte) - A few chopped
  • Red chilli powder (Lal mirch) - 1/2 teaspoon
  • salt to taste

Method for Khaman Dhokla:

  • Mix besan, suji, crystals, sugar, chilli-ginger paste and salt in one cup of water to make a batter.
  • Take a thali of about 6'' in diameter, grease it and place it in a cooker.
  • Add fruit salt to the batter, sprinkle a little water, mix well and pour half of the batter into thali and steam cook it for 20 minutes.
  • For seasoning, heat oil in a pan, add mustard seeds and let them crackle, then add green chillies, fry for few seconds.
  • Remove from fire and pour the seasoning over the dhokla and garnish with coriander leaves, lastly sprinkle red chilli powder.
  • Cut into square pieces and enjoy Khaman Dhokla with mint chutney or coconut chutney.
